Mui Choy Pork Stew

1. Take one bunch of mui choy (sweet one), soak in water. Then wash throughly, to remove sand and other stuffs... Cut into small pieces
2. Cut strip of mui yok (pork) into pieces
3. Without oil, just fry the mui choy until the leaves are dry (the drier the better, as wet mui choy will not last as long). Remove.
4. Bruise 6 pieces of garlic (don't chop), and stir fry in hot wok
5. Put in mui choy and continue to stir fry
6. Put in pork and stir fry
7. Fry until pork almost is cooked
8. Pour in 6 tblspoons of dark soy sauce, continue to stir fry. Note: actually how much sauce to use depends on what brand you are using. Try out first..
9. Slowly stir in water, until cover the pork and mui choy
10. Wait until boiling, then turn down heat to simmer for 1-2 hours. Add water if needed
11. Season with salt and sugar

Can keep without being refridgerated for 2 days..
